Greek Lemon Rice Recipe With Feta Cheese
A great Greek style rice dish with lemon and a touch of dill and topped with Feta cheese that’s easily made in your rice cooker.
Greek Lemon Rice Recipe Ingredients:
- 1 1/2 cups long grain white rice – jasmine or basmati rice work great for this recipe
- 2 cups chicken stock
- 2 tablespoons olive oil
- 2 small boiling onions, chopped
- 1/4 cup pine nuts
- 1/4 cup fresh lemon juice
- 1 tablespoon minced fresh dill
- 1 1/2 teaspoons minced fresh mint – if desired
- 1 cup crumbled feta cheese
- 1 lemon, cut into wedges
Lemon Rice Recipe Directions:
Prep time: 5 mins Total time required: 75 mins.
1 Coat rice cooker inner pot with cooking spray or oil.
2 Add rice and stock to rice cooker.
3 Set cooker for the regular cooking cycle and start.
4 When the rice cooker switches to keep warm, let it sit and steam for an additional 10 minutes.
5 While the rice steams, heat olive oil in a small skillet, then add onions and cook for 5 minutes, stirring frequently, until onions are translucent.
6 Add pine nuts and cook, stirring constantly until they are golden (takes about a minute).
7 After the 10 minutes of steaming, add the onion and pine nut mixture to the rice, along with the lemon juice, dill, and mint (if using). Stir to combine.
8 Close the rice cooker lid and ‘keep warm’ for 10 more minutes.
9 Transfer to a serving platter, and top with feta cheese and lemon wedges.
