Gluten Free Asian Chicken Quinoa Recipe
A healthy gluten free quinoa recipe with an Asian flair
When cooking quinoa, be sure to rinse the quinoa first as quinoa has a bitter outer coating called saponin which should be washed off. For more information on cooking gluten free quinoa, check out The Complete Guide To Cooking Quinoa.
Quinoa Recipe Ingredients
3 cups water with a large dash of salt
1 1/2 cups quinoa – washed and drained
1 1/2 cups mandarin oranges
2 poached chicken breasts, shredded
5 basil leaves
large handful Arugula Leaves
2-3 T. Tamari soy sauce
Quinoa Recipe Directions
1. Place water and quinoa in inner rice cooker pot, stir quinoa and start.
2. While quinoa cooks, mix together mandarin oranges, chicken, basil, arugula and tamari.
3. Once the rice cooker switches over to warm mode, fold cooked quinoa into chicken mixture, mix together and let cool in the fridge, then voila! Serve your fantastic gluten free oriental chicken.
Tip: You can easily poach your chicken in the rice cooker at the same time you are cooking the quinoa simply by placing it in the steamer basket in the inner pot above the quinoa. Shred before adding to quinoa.
