Gluten Free Vegetarian Recipe with Quinoa
Here’s a tasty gluten free vegetarian recipe using quinoa which may be served either hot or cold
Quinoa Vegetable Recipe Ingredients
¾ cup quinoa – rinsed
2 cups vegetable stock
1 tablespoon olive oil
1 medium onion, chopped
2 sticks celery, chopped
2 teaspoons crushed garlic
1 medium carrot, diced
½ small red capsicum, diced
½ cup mushrooms, chopped
Place the vegetable stock and quinoa in the rice cooker.
While rice is cooking, heat oil in a large wok or pan and add onion and cook for 2 minutes, then add garlic and cook for an additional 2 minutes.
Add celery and carrot and sauté a few more minutes before adding the remaining vegetables. Cook until vegetables are cooked as desired.
Once quinoa has finished cooking, stir in vegetables and serve or chill.
This makes a tasty hot vegetarian dish and may also be served cold the next day as a salad. You can vary the vegetables according to your preference or what you happen to have on hand. Quinoa (pronounced “keenwa”) is a gluten-free grain with an excellent protein profile. It is a nutritious alternative to rice for those living a gluten free lifestyle.
