Make a Pumpkin Pie in a Rice Cooker!
Skeptical? Don’t think it can be done? Oh yes it can! It’s not that difficult to make a pumpkin pie in a rice cooker. Of course if you have access to an oven that would be easier. But if you don’t and you really want to make a pumpkin pie for Halloween, Thanksgiving..or any old time, it can be done in the rice cooker.
Here’s what you’ll need for your rice cooker pumpkin pie:
Rice Cooker Pumpkin Pie Ingredients
15 oz. can of pumpkin puree.
Milk and sugar
1 Tbl brown sugar
Pie crust – make your own or buy refridgerated pie crust – do not use frozen
butter – to coat rice cooker inner pan
1 Tbl pumpkin pie spice
Whipped cream – optional
Place pumpkin, sweetened condensed milk, egg, brown sugar and pumpkin pie spice in mixing bowl and mix until the contents are a creamy consistency
Coat the inner pan of your rice cooker with butter. Make sure it is thoroughly coated to prevent the pie crust from sticking to the sides. After coating with butter, place pie crust into the inner pan keeping it as even as possible. Press the crust firmly against the sides of the inner pot. The crust should be thin – too thick and the dough will not thoroughly cook through.
Once the crust is in place, pour the contents of your mixing bowl into the rice cooker pan.
Close rice cooker lid, and set to COOK. You’ll be doing this more than once.
When your rice cooker switches to KEEP WARM mode you’ll need to restart it for a second cycle. Once the last cycle is complete, test your pumpkin pie with a toothpick in the center. If not completely cooked, you may need one more cycle of cooking. You may have to monitor the cooking process during this final cycle to ensure you get your pie just right.
Now for the tricky bit. First, allow your pumpkin pie to cool for 30 minutes. Next you will need a plate that fits almost perfectly into your rice cooker pot. Slide the the plate inside close to the pie and hold it in with one hand while turning the inner pot upside down. Voila! There you have it. A rice cooker pumpkin pie. Top with whipped cream and you are ready to enjoy
