Dorm Room Rice Cooker Stew Recipe

It’s not necessary to have a kitchen to cook in. Here’s a stew that’s a complete meal in itself and you can make it with just a rice cooker.  That makes it perfect for cooking in a dorm room, hotel room, or wherever else you may be that has electricity but no other cooking facilities.

By getting creative and varying the types of beans and flavoring of the tomatoes, you can use this rice cooker stew recipe to make a wide variety of meals. You can use kidney beans with chili-style tomatoes, chick peas with basil, garlic, and oregano, black beans with garlic and onions, and pinto beans with jalapenos.  Add lentils, different vegetables, whatever suits your taste.

Prep time: 12 minutes. Total time: about 40 minutes

Makes 4 servings, 1 cup each

Dorm Room Stew Recipe Ingredients

1/2 cup rice
1 cup water
1 onion, chopped
1 green pepper or zucchini, chopped
1 clove garlic, minced
1 can (15 ounces) diced tomatoes, with seasoning if you like

1 can (15 ounces) rinsed beans
salt to taste
grated or cubed cheese (optional)

Recipe Directions

Place the rice, water, chopped onions, chopped green peppers or zucchini, minced garlic, and tomatoes with the juice into the rice cooker. Turn cooker on and let it complete its cooking cycle.
While the stew is cooking, rinse the beans and cut up cheese into 1/4 inch cubes. Once the cooking cycle is complete, add beans to rice mixture and stir. Turn the rice cooker back on to warm the beans for about 2 minutes. Taste and add seasoning as desired.
Serve topped with grated or cubed cheese.
