Saffron Shrimp Rice
This saffron shrimp rice recipe is one of our favorite rice cooker recipes. The delicate taste of saffron rice with perfectly steamed shrimp is a perfect taste combination. Try this saffron rice recipe and we’re sure you’ll enjoy it as much as we do.

Saffron Shrimp Rice Recipe Ingredients
1 cup Jasmine or other long-grain rice – basmati rice works nicely
1 cup chicken broth
1 8-ounce bottle clam juice, or 1 cup water
2 tablespoons unsalted butter
1 tablespoon dried minced onion
- Zest of 1 lemon
2 tablespoons lemon juice
1/4 teaspoon saffron – you may add more saffron to suit your preference
- Kosher salt and freshly ground black pepper, to taste
8 ounces large shrimp, peeled and deveined, with tails left on
- Fresh minced chives, for garnish
Put all the recipe ingredients, except for there shrimp and chives, in the inner rice cooker pot. Press Cook button. After liquid begins to boil, cook the saffron rice for 10 minutes. Carefully open the rice cooker to avoid steam burns and add shrimp on top of the rice. Cover and continue to cook until the rice cooker switches to Keep-Warm function. Serve immediately and garnish with chives. *Do not allow to stand after rice cooker switches to Keep-Warm as the shrimp will become overcooked.
