Rice Cooker Salad Recipe
Here’s a quick and easy recipe for a low calorie steamed vegetable salad with crunchy, colorful veggies. You can easily make this salad using your rice cookers’ steamer tray. Steam bite sized pieces of cauliflower, broccoli, carrots or green beans just until crisp tender. Toss with a low calorie Italian salad dressing to make this a lo cal salad. Refrigerate several hours … then enjoy with a clear conscience!
1 cup cauliflower; bite size
1 cup broccoli; bite size
1 cup carrot or green beans bite size
1 low calorie Italian dressing
Place bite size vegetables in the rice cooker steamer tray. Add 1 cup water to the inner rice cooker pot, cover and steam for approximately 20 minutes or until just
crisp tender. Immediately remove steamer tray and plunge into ice water to stop cooking process. Refrigerate and serve after several hours.
