A Taste of the Southwest
Great rice cooker recipe with a southwestern flair. You can vary the spices if you like and add jalapenos or other peppers for an added spicy kick.
Southwest Recipe Ingredients
1/2 medium green pepper — diced
1/2 medium onion — chopped
1 garlic clove — minced
2 1/4 cups chicken broth
1 1/2 cup rice — long grain, uncooked
1/2 tsp. ground cumin
1/8 tsp. ground turmeric
1/2 tsp. salt — (optional)
10 ounces tomatoes with green chilies — can(diced)
10 ounces frozen corn — thawed
Southwest Recipe Directions
Place all ingredients except beans and corn into the rice cooker, close lid and cook until rice cooker clicks on ‘warm’ setting. Stir in beans and corn and serve.
